Paleo Muffin with Almonds and Cranberries





A fast paleo muffin with almonds and cranberries recipe to prepare paleo muffins, really good.

Ingredients

  • 320 grams of almond flour (ie ground almonds)
  • 4 Eggs
  • 2 Bags of Vanilla Extract
  • 3 tablespoons of honey
  • 3 tablespoons of lemon juice
  • Fresh blueberries (to taste)
  • 80 ml. of Coconut Oil
  • 1 tsp bicarbonate of soda


Preparedness

  1. In a container, beat the eggs.
  2. Add vanilla extract, honey, coconut oil (liquid), lemon juice. Mix well.
  3. Then pour the almond flour and the baking soda.
  4. Fill the molds in half, inserting some blueberry (to taste) in each mold.
  5. Bake for 15 minutes at 175 ° C. Then remove from the oven and let cool.

If you do not have almond flour (found in health food stores anyway), you can buy almonds (peeled) and grind them in a coffee grinder. In the mixer, the result is not as perfect.

If the coconut oil is solid, you must first warm (45 seconds in the microwave), otherwise it will not blend with the other ingredients.

I would add 3-4 blueberries in each mold. It should add them (a couple at a time) until you pour the mixture. If you put the blueberries in the compound during the amalgam, they will break and the end result will not be aesthetically impeccable.

Typically, with these doses, I get 12 muffins beautiful chubby.
