Paleo chicken coconut curry
Ingredients
- 400 g of chicken
- 400 g cauliflower
- 200 ml of coconut milk
- 1 onion
- 1 tablespoon curry (1 tablespoon = 15ml)
- 1 tablespoon of coconut oil
- Heat the coconut oil in the pan
- Slice the onion and chicken
- Sauté 3-4 minutes over high heat in coconut oil
- Meanwhile, cut the cauliflower into pieces
- Add the coconut milk and cauliflower in the pan.
- Mix well and put on low heat, covered
- Cook for 5 minutes.
- Add the curry, mix well and cook for 2 minutes uncovered.
Before serving, you can add a few shavings of fresh coconut and coriander leaf for color.
