Rabbit onions Paleo

Rabbit onions Paleo

Rabbit meat is one of the leanest there.

It is certainly the quintessential queen lean meats, high protein, high value, low calorie and highly nutritious.

This dish can accompany with vegetables or vegetables, and why not, also with some salad.

Ingredients:

- 1 rabbit good sized chopped
- 4 large onions
- 2 tomatoes, peeled and seeded
- 4 or 5 garlic cloves
- paprika
- black pepper
- powdered thyme
- 2 bay leaves
- 5 toasted almond
- coconut oil

Preparation

In a saucepan, better if mud, put some coconut oil and the garlic to rehoguen until they are golden. The aside.
chopped Add the rabbit to the pan.

When you sauté a few minutes, turn away your liver.
now continue sautéing and add finely chopped tomatoes, paprika, pepper and bay leaves.

After a few minutes, add the chopped onions very thin julienne.
We few laps and when the onions have reduced, lower the heat and add a little broth (if you have) or some water with a little lemon juice naturally.

While the rabbit is cooking over low heat, we will move from time to time.
'll put in a mortar the liver reserve before along with almonds and garlic sections. I chop everything well until it looks like a paste.

The rabbit should simmer for 1 hour. In the final minutes, the mortar add a pizquito thyme and sea salt to taste (this is optional). But also a dash of lemon is perfect.

NOTE: The original recipe has wine but it is better not to include it because we would be their sugars and this is not very convenient.

Bon appetit tribe!
