Paleo Pancakes with Vegetables
Ingredients
- 2 zucchini clear
- 2 Carrots
- 100 grams of cooked spinach
- Coconut Oil for frying
- 2 Eggs
- Salt and pepper: to taste
Preparedness
- Cut carrots and zucchini julienne. The spinach are already cooked.
- Put all the chopped vegetables in a cloth and squeeze with all your strength. It will be released very liquid.
- Then put the vegetables in the container and add the eggs, salt and pepper. Mix.
- In a pan heat oil and add the coconut pancakes (thin).
- Then fry over low heat on both sides. Bake at least 6-8 minutes on each side.
- Chopping the vegetables and squeeze in a cloth, in order to bring out all the liquid (or almost)
I accompanied the pancakes with Chimichurri Sauce consists of: parsley, red wine vinegar, garlic, oregano, olive oil, red pepper, salt. And 'spicy and goes perfectly with pancakes.
