Paleo Blueberry Muffins
Without sugar and wheat: Still sweet, juicy and filling. Good to go!

Ingredients:
- 2 ripe bananas
- 1/2 tsp powdered vanilla
- 4 eggs
- 100 g ground almonds
- 20 g coconut flour
- 2 tsp cinnamon
- 1/2 teaspoon cream of tartar
- 50 g of melted coconut oil
- 100 - 150 g blueberries (to taste)
Preparation:
- Preheat oven to 180 degrees.
- Grease muffin tin or ramekins up (our experience: stick the muffins in paper cases, unfortunately, often later fixed).
- Mix banana, vanilla and eggs with a hand mixer in a bowl.
- Add remaining ingredients (except the blueberries) and gradually mix in until a thick dough is formed.
- Gently mix in the blueberries. Spread batter into ramekins for 30 - 35 mins in the oven.
Our conclusion: These blueberry muffins taste like the "real"
If you do not know it, it is believed to have little Paleo muffins on. Therefore is well suited for this, to convince skeptics!
