Paleo Lasagna

A lasagna paleo simple recipe and fast enough to prepare. But above all, very good. Besides Paleo.

Ingredients
  • 5 Zucchini clear
  • 230 grams of cashew nuts (not salted or roasted)
  • 700 ml. of Tomato Sauce (you can get up to 1 liter
  • 4 tablespoons of extra virgin olive oil
  • 40 grams of Basil
  • 160 ml. vegetable broth (alternatively, okay even water)
  • Salt and pepper: to taste
Preparedness
  1. Cut the zucchini to the longest side into thin strips. In order not to get hurt, I recommend using a mandolin .
  2. Arrange on a baking sheet, sprinkle with salt and pepper and brush with oil. Bake at 175 ° C for 10 minutes.
  3. In mixer add cashews, basil, salt and broth and reduce everything to a cream.
  4. In a saucepan, heat oil and garlic. Then add the tomato sauce and basil and simmer for 10-15 minutes.
  5. Grease a baking dish, then build the lasagna adding a layer of zucchini, tomato sauce and cashew cream and basil. So, until exhaustion.
  6. Bake in oven for 45 minutes at 175 ° C.
Before serving, allow to cool for 10 minutes. Good to be enjoyed hot or cold. I have rarely tasted so good lasagna
