Paleo breakfast muffin





Again a delicious alternative for breakfast . Our Paleo breakfast muffin. With banana, apple and chia seeds. A pleasure.
For 12 muffins

Active: 10 minutes

Total: 30 minutes

Ingredients:

  • 1 banana
  • 1 apple
  • 2 eggs
  • 1 tbsp chia seeds ( a superfood )
  • 125g ground almonds
  • 30 ml of coconut oil
  • 40 ml of water
  • 1 tsp cream of tartar
  • 2 tsp powdered vanilla
  • 1 tablespoon cinnamon
Preparation:
  1. Preheat oven to 175 ° C.
  2. Mash the banana on the bottom of a bowl with a fork to mash, grate the apple and both add to the other ingredients.
  3. Mix it with a mixer and spread into the muffin pans, so they are filled to about 3/4.
  4. Give the muffins in the oven on the middle rack and bake for about 15-19 minutes. If you can stab a toothpick and it comes out clean again, the muffins are done.
