Paleo banana mousse with cinnamon

Have a little overripe bananas in your fruit basket? No problem, use them to do this off and you will give them a second life!

This recipe is best to use a little overripe bananas! And she is super easy to make! :)

Ingredients
  • Ripe bananas 400g peeled
  • Egg whites: 4 (about 120g)
  • Cinnamon 1 teaspoon
  • Vanilla 1 pinch
  • Lemon: 1
  • Agar: ½ teaspoon
  • Honey (optional): 40g
Instructions
  1. Put in a pan to heat, agar-agar with 50 ml of water or vegetable milk if you (a glass bottom) ,. Stop the fire to the boil.
  2. Mix the bananas with the lemon juice (zest too if you want), vanilla, cinnamon and liquefied agar and heated (this is the result of the heat that gives it its gel strength).
  3. Whisk an egg whites with a pinch of salt.
  4. Gently mix the banana cream with egg whites.
  5. Pour into ramekins and place them in the refrigerator at least 3 hours to get a fairly firm foam.
  6. Decorate with slices of banana and pinches cinnamon (and cinnamon sticks if you have!)
