Paleo Mexican Chicken Mole Recipe

For this weekend has Svenja Trierscheid be inspired by the Mexican cuisine. There are Mole chicken!

For 2 servings you will need:
  • 2 chicken thighs
  • 2 cloves of garlic, chopped
  • 1 small onion, chopped
  • fresh chopped chilies, to taste
  • 200 ml of chopped tomatoes
  • 2 tablespoons cocoa powder
  • Cumin, turmeric, cinnamon, coriander seeds
How to cook Paleo Mexican Chicken Mole Recipe
  1. The legs in a large, deep pan with lid in plenty of ghee or coconut oil saute until they get color and take out again.
  2. Garlic, onions and spices, heat briefly in the remaining fat.
  3. Fill with the tomatoes, the cocoa powder and cook the leg put back inside.
  4. The pan now cover the legs and simmer for about 7-10 minutes until they are cooked through.
