Paleo chocolate mousse

The chocolate mousse is one of the easiest to achieve revenue and more popular (unless you're the grumpy smurf and you do not like chocolate.) The new version I offer is signed by a top chef pastry.

Chocolate is one of the snacks that you can give to satisfy your sweet cravings. Obviously, the more chocolate is black, the better! Why? Because then contains less sugar, more cocoa and therefore more antioxidant , but also more fatty acid that take your breath hunger. Prepared foam you operate another type of gustatory pleasure.

I had already proposed the chocolate mousse in the program in 5 weeks to reward you for your efforts. It was the simplest form: eggs and chocolate. Today, to reward you for your efforts to take care of yourself by eating paleo, I propose an improved version, inspired by my favorite pastry chef and creator of the finest delicacies: Pierre Hermé.

For this paleo version, the milk is replaced with coconut milk. A little sugar is used. If you are paleo-adapted, you do not need that extra sugar.

Ingredients
  • 170 g dark chocolate (70% cocoa)
  • 80 g of coconut milk
  • 1 egg yolk
  • 4 egg whites
  • 20 g sugar cane least refined as possible (Optional)
Instructions
  1. Heat the coconut milk.
  2. Meanwhile, cut the chocolate into pieces (the best being the chop).
  3. When milk is hot, pour it over the chocolate and stir gently. Add the egg yolk and mix.
  4. Beat the egg whites while adding sugar rain.
  5. Stir in 3 egg whites to the chocolate.
  6. Put mixture into ramekins and refrigerate for at least 3 hours.
Tip
Cane sugar is less refined than the normal sugar. Then that's what I used. You can replace it with any.What other sweetening substance that will bring his little personal touch. I thought the coconut sugar, but it requires a certain budget.
