Paleo Cupcakes with Chocolate Frosting

We love to find an alternative to conventional paleo to impress our non-paleo friends always tanks. In seeking a recipe for cupcakes gluten and sugar (not easy), we stumbled upon this blog in English paleo adorable, The Paleo Project where the blogger qualifies as imperfectly paleo (I love that phrase that describes me perfectly) . Supporting evidence (that is our own picture), we try the recipe for Paleo cupcakes with chocolate frosting and it was a success. You'll never want to go back to pre cupcakes that you will find far too sweet.

Ingredient

For the cupcake:
  • 6 eggs (small personal variant, 4 eggs and 2 egg whites)
  • ½ cup coconut flour
  • ½ cup coconut oil
  • ½ cup honey
  • 1 c. tsp vanilla extract
  • 1 c. teaspoon sea salt
  • ¼ c. teaspoon baking powder
For the chocolate icing:
  • 1 cup dark chocolate 70% or more
  • ½ cup coconut oil
  • 2 c. tablespoons maple syrup
  • 1 c. Soup to extract vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. In a bowl, combine coconut flour, sea salt and baking powder. Mix well.
  3. In another bowl, combine eggs, coconut oil, honey and vanilla. Mix well.
  4. Add the cream mixture to the dry mixture and mix well to obtain a homogeneous and smooth. Finally pour the mixture into your molds.
  5. Cook for 20 minutes. Remove and let cool.
  6. For the chocolate icing, chocolate making based and properly mixed with coconut oil and maple syrup.
  7. Once mixed, place the mixture in the freezer for about 10 minutes or until frosting is cooled and thickened. Then beat with an electric mixer until desired consistency.
  8. Finally, the icing to decorate the cupcakes and all, sprinkle with grated coconut.
