Paleo Cupcakes with Chocolate Frosting
We love to find an alternative to conventional paleo to impress our non-paleo friends always tanks. Ingredient
For the cupcake:
- 6 eggs (small personal variant, 4 eggs and 2 egg whites)
- ½ cup coconut flour
- ½ cup coconut oil
- ½ cup honey
- 1 c. tsp vanilla extract
- 1 c. teaspoon sea salt
- ¼ c. teaspoon baking powder
For the chocolate icing:
- 1 cup dark chocolate 70% or more
- ½ cup coconut oil
- 2 c. tablespoons maple syrup
- 1 c. Soup to extract vanilla
Instructions
- Preheat oven to 350 degrees.
- In a bowl, combine coconut flour, sea salt and baking powder. Mix well.
- In another bowl, combine eggs, coconut oil, honey and vanilla. Mix well.
- Add the cream mixture to the dry mixture and mix well to obtain a homogeneous and smooth. Finally pour the mixture into your molds.
- Cook for 20 minutes. Remove and let cool.
- For the chocolate icing, chocolate making based and properly mixed with coconut oil and maple syrup.
- Once mixed, place the mixture in the freezer for about 10 minutes or until frosting is cooled and thickened. Then beat with an electric mixer until desired consistency.
- Finally, the icing to decorate the cupcakes and all, sprinkle with grated coconut.
