Paleo fruit cake

Here is another example showing that the recipe wheat is not essential even for cakes. This recipe for mini fruit cakes in convenient format (you can easily get to work) will ensure you a good taste paleo.

Ingredients
  • 150g ground almonds
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 100g raisins
  • 50g pecans
  • 50 g hazelnuts
  • 4 eggs (about 230g)
  • 2 tablespoons of coconut oil
  • 1 tablespoon honey
  • 1 tablespoon vanilla extract
Instructions
  1. Mix the ground almonds, salt and baking soda
  2. Add the dried fruit
  3. In another bowl, beat of eggs and add vanilla extract, coconut oil and honey
  4. Mix the contents of both bowls and pour into a greased mini cake ( the one I use )
  5. Bake 30 minutes at 180 ° C.
Tips

If you do not like raisins, you can easily substitute another dried fruit (apricots, dates, prunes). Similarly, you can use almonds, walnuts, brazil nuts, macadamia nuts ...
