Paleo glasses almond-orange

Probably one of my favorite desserts! Light, fresh and tangy wish. The almond-orange glasses are a delight for the taste buds!

Ingredients
  • Oranges (or orange juice) 3 (or 250 ml)
  • Almond Milk: 300 ml
  • Egg yolks: 3
  • Honey (or maple syrup): 30g
  • Arrowroot: 20g
  • Vanilla 1 pinch
  • Agar: ½ teaspoon
  • Whole almonds crushed: A handful (for decoration)
Instructions
  1. Dissolve arrowroot and vanilla in the cold almond milk. Put it to heat gently in a saucepan.
  2. In a bowl, beat egg yolks with honey.
  3. Pour the boiling milk over the mixture while beating. Return to the heat until thickened, whisking constantly (it thickens very quickly).
  4. Divide the cream in the glasses.
  5. Squeeze the oranges, or use orange juice. Dilute the juice with agar-agar and bring it to a boil in a saucepan.
  6. Remove from heat and let cool. Then pour into the glasses of almond cream.
  7. Book 1 hour in the refrigerator.
  8. Before serving, sprinkle with chopped some almonds.
  9. Enjoy! :-)
