Chocolate is one of the snacks that you can give to satisfy your sweet cravings. Obviously, the more chocolate is black, the better! Why? Because then contains less sugar, more cocoa and therefore more antioxidant , but also more fatty acid that take your breath hunger. Prepared foam you operate another type of gustatory pleasure.

I had already proposed the chocolate mousse in the program in 5 weeks to reward you for your efforts. It was the simplest form: eggs and chocolate. Today, to reward you for your efforts to take care of yourself by eating paleo, I propose an improved version, inspired by my favorite pastry chef and creator of the finest delicacies: Pierre Hermé.

For this paleo version, the milk is replaced with coconut milk. A little sugar is used. If you are paleo-adapted, you do not need that extra sugar.

Ingredients
  • 170 g dark chocolate (70% cocoa)
  • 80 g of coconut milk
  • 1 egg yolk
  • 4 egg whites
  • 20 g sugar cane least refined as possible (Optional)

  5. Stir in 3 egg whites to the chocolate.
  6. Put mixture into ramekins and refrigerate for at least 3 hours.
Tip
Cane sugar is less refined than the normal sugar. Then that's what I used. You can replace it with any. What other sweetening substance that will bring his little personal touch. I thought the coconut sugar, but it requires a certain budget.

Paleo nutella rolled

Paleo nutella rolled

Who says Rolled pancake said. And who says crepe, said wheat flour. But for this recipe you have that paleo products and no almonds (found a little too much for my taste in sweet recipes). And to top it off, three practical advantages over the standard version.

The main ingredients in this recipe are plantains and eggs. Do not use flour brings three advantages over the classic version:
  1. You do not have to let the dough rest.
  2. You certainly will not get lumps.
  3. You can not miss a pancake (it's just too easy to do).
Surprisingly, the taste of eggs does not feel that is a good point. And the use of plantain brings good texture. And bakery any difference gram can change everything, I bring you the exact dosage that I used.

Ingredients
  • 210 g of plantain (about one large)
  • 160 g egg (about 3 medium)
  • 2 tablespoons of coconut oil
  • 3 tablespoons water
  • 1 pinch salt

  1. Mix all the ingredients to form a smooth dough.
  2. Make pancakes in a frying pan non-stick.

Tips

Vary according to your taste: you can substitute hazelnuts for walnuts or almonds, dried apricots with prunes. In the first photo, the bar is 4 x 16 cms. On the second, the squares have 4 cms aside. Paleo lasagna without pasta

Paleo lasagna without pasta

Paleo lasagna recipe without pasta, bechamel or is this always lasagna? Out of respect for Italian culture, I would say no. But the principle remains the same: alternating layer of meat sauce and tomato slices ...

... Eggplant. Pasta is replaced by eggplant and béchamel a preparation 100% paleo. That the right products for a paleo recipe, perfect to introduce your family to the paleo diet.

Ingredients

To prepare meat-tomato
  • 500g minced beef
  • 500 g tomatoes (about 5 medium)
  • 250g onion (about 1 large)
  • 1 clove garlic
  •  tomato paste
  •  oregano
  •  salt
For "bechamel" paleo
  • Nuts 100 g
  • 50 g almond
  • 200 ml water
  • Pasta lasagna paleo
  • 250/300 g eggplants (about 2 medium)
Instructions
  1. Cut the eggplant slices for about 5 mm (if the slices are too thin, they burn in the oven). You must get enough slices to cover your baking dish twice.
  2. With a brush, brush the eggplant slices with olive oil (you must act quickly because the flesh absorbs oil quickly) Put in the oven at 160 ° C in grill mode for 10 minutes. Watch the slices do not burn. When it begins to brown, turn slices.
  3. While the eggplant is cooking, cut the onion, garlic and fry them in the pan, in olive oil until onions are translucent.
  4. With ground beef, shape with your hands into small balls and add them to the pan with the onions. Stir.
  5. Cut the tomatoes into slices. And add them to the pan when the meat is cooked on the surface. Stir.

  7. Pour half of the water that is in the pan and add the tomato paste to give consistency. Adjust seasoning with salt and oregano. Stir.
  8. Pour 1/3 of your preparation beef-onion-tomato in the dish. Cover with a layer of eggplant slices, then your preparation walnut-almond.
  9. Repeat step 8
  10. You finish by covering your preparation beef-onion-tomato. Please do not top with a layer of walnut-almond paste.
  11. Bake 20 minutes at 160 ° C.
Tips

Good meat
Depending on where you live, supermarkets offer a meat counter very correct. Rather than taking ground meat already packaged, ask the butcher to make you from a real piece of meat, you're sure (e) to have a fresh product.

Cut an onion without crying
Cut the ends of the onion and soak it in a container of water. Peel the onion under water. Take it out of the water, cut it in half and immerse briefly (2 sec) 2 pieces in water. Now you can chop your two pieces of onion without shedding a tear (you do not need to rush you but do not put 3h either).

Mounting lasagna
Why not end with the preparation walnut-almond?
Because the oven will roast nuts and give them a stronger flavor that will take too much.
The interest of the walnut-almond preparation is to have a texture that is similar to the bechamel. The taste of nuts should be minimal, and for that they must remain inside the flat.

Paleo Chicken Stew

Paleo Chicken Stew

This is a rather special dish I book you because it relates to my childhood. In fact, my father had us regularly this recipe which has always been one of my favorites. I realized some time ago that it is fully compatible with the paleo diet. I remade last weekend and I share it with you.

  • 1 onion

  • 70g tomato paste
  • 150 ml water
  • 50g ghee
  • 1 teaspoon chopped ginger
Instructions

  8. Serve with cauliflower mixed and steamed (it is cauliflower in the picture, and not rice:-))
Tips
Prepare this dish the day ahead. When finished cooking, let stand, covered, overnight and reheat over low heat the next day. It will only get better.

Feel free to cut the thigh bones and wings 3, in order to properly release the bone during cooking.

Your chicken farmer will normally be accompanied by the offal (liver, gizzard, heart, kidney). Cut the gizzards and liver into pieces and add all the rest of the meat.

When you remove the skin, fat can remain on the meat: you can leave.

This dish has a lot of bone and it can be tedious to remove the flesh. Keep this dish for your family and eat the most difficult pieces with your fingers. You have no choice if you want to enjoy the nutritional properties of the bone stuck in the bone.

Paleo Picadillo Recipe

Paleo Picadillo Recipe

No recipe brings the three main ingredients of Paleo-kitchen - meat, vegetables and fruit - so enjoyable and aromatic together like this dish: Picadillo.

It is pronounced: "Pikadiyo" because the double "l" is spoken in Spanish as "y". The court comes namely from the Caribbean, more specifically from Cuba.

I've found it in a Caribbean cookbook called Essential Caribbean  *, Has an American friend gave me times. The Caribbean cuisine is full of paleo-compatible recipes, one must only here and there highlight some flour from the list of ingredients, occasionally omit batters and ignore the rice. Otherwise, 80% of the recipes can be incorporated virtually ummodifiziert. So who is the English language cooking powerful, is this the Caribbean Cookbook  * Recommended.

Literally translated means "picadillo" really only "Small Cut" in the sense of "Chopped", and that is the main ingredient: mincemeat. To this end, peppers, tomatoes, olives, onions and raisins join. And plantains.

Plantains - The tropical alternative to potato

Plantains are recently found in some supermarkets. They are significantly larger than normal bananas and less sweet: If they are still green, they taste neutral, almost like potatoes. The more yellow it will, over time, the more mature they are. Then they develop a slightly bananiges flavor and are always sweeter. So they become a flexible leaflet in moderation harmless, "good" carbohydrates supplies.

Curious? Here comes the recipe to try at home, it is actually quite simple and for our use, I have adapted the recipe a little:

Recipe: Picadillo

Ingredients
  • 3 tablespoons butter
  • 2 onions chopped,
  • 3 cloves garlic, minced,
  • 2 bell peppers, cut into cubes
  • 1-2 packs of minced meat (approx 600-800g)
  • 6 tomatoes (or tomato puree 0.5l)
  • 3 tablespoons raisins
  • 3 tablespoons olive pitted,
  • 1-2 bay leaves
  • 1 teaspoon cumin (Cumin)
  • Chili powder (to taste)
  • 1 dash of vinegar

  6. Serve the picadillo on plates and serve with the fried bananas on it.

Picadillo-Tuning

The ground meat should already be of good quality. Either you take organic minced or better ground beef from grazing animals, because of better fat composition (minced meat from grazing animals, there are recently more often in frozen food, imported, unfortunately, from as far away as New Zealand, as in this country real grazing animals are rare to find).

The original recipe also had capers in it, if you like it you can like to stir.

Who stand around vegetable scraps, they may be happy to use - there are no fixed rules, what belongs into precisely in a picadillo or not. If I my father (the Chilean and therefore the court knows of course) tell that we cook picadillo, he immediately asks: "picadillo with what?" The type of meat can be varied arbitrarily.

Picadillo is now an integral part of our weekly schedule. The ingredients you can get anywhere (instead of plantains you can not quite ripe bananas take) and they are cheap, so that this court can give an exotic Paleo highlight for guests even for the small purse.

Paleo chocolate cake

Paleo chocolate cake

The Paleo-rum-raisin stollen from the pre-Christmas article is a real winner, I have now been determined baked 10 times.

It is not even that my most baked recipe. This privilege is one of my absolute favorite pie tonight - with very special guests, but more about that in a later article - has provided enjoyment.

Can there be a better dessert than chocolate cake? Better said: "Tarte of Chocolate", an original French family recipe that my wife Friederike brought back from their au pair time.

I have modified the recipe to make it Paleo-fit countless times: wheat flour replaced with almond, coconut or other flours, taken more or less eggs, with or without baking soda, honey instead of sugar, cocoa powder instead of chocolate, various back- times and cool-down strategies, etc. Anything I've tried it.

Today, it has become a proven, guaranteed delicious, yet extremely simple recipe. Can be so simple chocolate cake!

Since then, the recipe has changed a little bit again: The eternal struggle between cocoa powder (bitter) and honey (sweet) has calmed down a bit and reaches a milder level. The preparation has been a bit more optimized.

Overall, this cake is so easy to make that it can be casually - just the thing for busy kids budget.

Here's the latest version:

Ingredients
  • 6 eggs
  • 100g butter (or coconut oil)
  • 2 go. Tbsp cocoa powder (100%)
  • 3 tablespoons honey forest
Preparation
  1. Preheat the oven to 180 degrees.
  2. Separate the eggs, beat the egg whites in a food processor very stiff with a pinch of salt.
  3. Meanwhile, melt the butter in the saucepan over medium heat and turn off the heat as soon as a majority of the butter is liquid.
  4. The cocoa powder into the butter dissolve completely using the residual heat.
  5. Successively egg yolk, honey (highest stirring stage) and chocolate butter (medium stirring stage) beat with the food processor with the egg white. In this case, stop as soon as the color is no longer dark.
  6. Pour the mixture into a buttered cake pan, either retained about 5 tablespoons ground. Bake the cake for 20 minutes.
  7. After expiry of the baking time the oven off, but keep the cake in the oven.
  8. After another 20 minutes, remove the cake from the oven and let cool 20 minutes.
  9. Alternatively, the finished cake on a plate and sprinkle with the remaining chocolate mixture.
Cake Tuning

This cake does not need any flour - eggs take over the whole structure work. The gentle cool-down method ensures that the cake less collapses and stays nice and airy.

That you can use the raw dough than chocolate, is the special attraction of this cake. You can also bake all the dough and it shorten the baking time a bit, then the core remains juicy and adds a distinctive melting. Caution: The cake should be consumed in both cases within 2-3 days.

If you want to have a tougher cake, you can of course also fully bake the whole batch of dough as described above.

Of course you can also decorate the cake, eg for birthdays: with melted chocolate (80% strength it should be already) or powdered sugar (1 teaspoon = 5 grams can be for children ever get over).

Instead of a springform pan, you can also muffin pans with the dough bake, or try classic ring cake or loaf tins. Each form has its own characteristics, because the inside of the cake different temperatures arise, which can vary the consistency.

Your Cake experiences

I'm really looking forward to your feedback! So if you bake this cake, please write me (preferably with a photo) in the comments below or via email, as he has become, which variants have your baked and how he has tasted you and your guests.

Paleo Apple Pie

Paleo Apple Pie

The weekend is approaching, the weather is better and it announces itself to visit. So the other day I was experimenting in the kitchen around a bit - and came spontaneously to this recipe: A Paleo-apple cake and just takes a moment.

A fruit cake is really quite simple: you need a dough as a base, then get fruit on it, and maybe even something fluid, so it is not too dry.

In the classical world, there is a cake-batter mostly of flour. In the Paleo-bakery we avoid the other hand, flour and all grain products, because corn is harmful .

Instead, we take it (as have almond worked well) and tie them with eggs: We give the dough mass, the egg binds them together and replaced the sticky ingredients of flour.

Instead of toxic sugar we take honey, and it as little as possible: honey is chemically essentially of fructose and glucose (such as sugar too), but contains at least a couple of valuable ingredients and is sweeter than sugar with the same amount, so that it takes less .

We also have some natural sweetness in store: Now come namely sliced apples and a little applesauce (so that the cake is not too dry) to do so. Some cinnamon gives the cake a refined aroma.

Here is the exact recipe: Paleo Apple Pie

Ingredients:
  • 4 eggs
  • 1 tsp honey
  • 100g ground almonds
  • 200g ground hazelnuts
  • Butter or coconut oil for the cake pan
  • 2 apples, each cut into 16 equal columns
  • 9 tablespoons applesauce
Preparation:
  1. The oven to 180 ° C preheat.
  2. The eggs with the honey in the mixer at the highest level hit as creamy as possible.
  3. The mixer on medium level switch and the Nußmehle add gradually.
  4. Pour the batter into a buttered cake pan and cover circular with the apples. Consult a computer for the optimal lay-algorithm so that the cake is so evenly at first, like in the picture.
  5. Spread the applesauce evenly over the cake and sprinkle cinnamon on top. This may be a bit chaotic.
  6. The cake 25 minutes to bake in the oven.
Ready!

It's amazing how quickly and easily this cake is baked, it is therefore suitable for great surprise visits. In less than an hour you have conjured up a great cake on the coffee table!

Write your experiences with this cake in the comments and tell me how he has arrived at your visit! I for one am looking forward to Saturday.

Have a nice weekend!

Paleo Banana Spread

Paleo Banana Spread

Now there is this delicious coconut patties, then of course must for breakfast or coffee something delicious on top. Something that one also sweetens without adding more sugar the day.

Bananas are ideally suited for a fruity spread, without which one needs further gelling. The simple recipe:

Ripe bananas, 1 tsp lemon juice per banana, 1-2 El water

Cooking Paleo Banana Spread

The banana zermusen and immediately heat the lemon juice and water in a saucepan, simmer until the Bananenmus has become quite tight enough.

This can be just like I do here before for a meal with 1 banana, or to cook something more on the same stock, then it should but simmer at least 4 minutes right and then immediately filled and sealed to the edge in clean jars. Then cool and dark storage and use within one month.

This mass is also suitable as a cake covering, as a sauce for pancakes or sweet pastries to stir in coconut milk or coconut cream and for further processing as smothie or shake. If you want to consume it quickly it can be concomitantly used as fill for the pie dough.

Hmmm ... but simply delicious, tastes like The Morning)

Paleo Potato Gratin

Paleo Potato Gratin

Who has not, you feel like something really hearty but you do not want to throw Paleo completely overboard. I love potato gratin but the normal recipe is made with cream and that is not quite Paleo. I've experimented a bit and the best gratin that I made on Paleo base was made with coconut milk.

For 4 people active //: // 35 minutes Total of: 90 minutes

Ingredients
  • 2500 g potatoes (raw)
  • 250 ml coconut milk
  • 3 cloves of garlic
  • 1 tablespoon olive oil
  • 4 sprigs of fresh thyme
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 pinch (s) salt and pepper
Kitchen Accessories :

Gratin dish (loaf tin / bread pan) , Aluminum foil

Preparation

  1. Preheat the oven to 200 ° C preheat (top and bottom heat)
  2. Peel the potatoes and place in a bowl of water so they do not turn brown and remain fresh.
  3. Herhacken the garlic finely and add along with the coconut milk in a large pan or pot until it boils and then easily let simmer 2 minutes more.
  4. Cut the potatoes into thin slices in the meantime. This is best achieved with a planer
  5. Take the coconut milk from the heat and season to taste with salt and pepper
  6. Now give the potato slices and sprigs of thyme to the coconut milk and mix everything well
  7. The gratin dish streak with the olive oil (or line with parchment paper), pour in the Paleo potato gratin mixture and press with a spoon everything "fixed"
  8. Who is ok with Parmesan can now sträußeln the Parmesan over it - but as I said not a must
  9. Now cover the baking dish with aluminum foil, place in the oven and bake for 45 to 50 minutes
  10. After 45 to 50 minutes remove the foil and bake for another 10 minutes
  11. Now the baking dish from the oven, let cool slightly and serve the Paleo potato gratin. When serving, please rauszunehmen it respect the thyme sprigs

Serve with
  • Meatloaf with egg
  • Pork in coffee crust with blueberry sauce

Our tip

If you like the Paleo potato gratin something hearty you can fry some bacon in the pan and this place for the last 10 minutes still on the gratin and mitbacken.

The Paleo Potato Gratin tastes good cold the way also, so if what then remains quiet the next day ready to eat.

(Instead of olive oil can also be used baking paper - simply interpret the shape of it)

THE POTATO GRATIN TASTES! AND ... NOT TO COCOS.

Many think of coconut milk immediately to the heavy coconut flavor and I know many that this is too strong. By bake at 200 degrees I've had the experience that the taste is as good as gone. Means the potato gratin Paleo really tastes almost exactly the same as as if you would do with normal cream - and gratin is at dinner or barbecues always a highlight.
