Paleo chicken broth

Paleo chicken broth

It is a traditional broth, but add potatoes or starchy tubers. You must be at least one hour fire, but if you have a pressure cooker with 40 min just enough. The good thing is you can also freeze and be available when needed.  A hot broth chicken for dinner, and since if it was after a workout, feel great!  You can be a good first course.

Ingredients:
- A medium chicken, clean, gutted and skinned
- 2 turnips
- 3 carrots
- a leek
- 2-3 stalks celery green
- a slice of peeled pumpkin
- a bay leaf
- a black peppercorns
- A corsage parsley.

Preparation

Use a pot large enough to hold all ingredients. Gets inside the whole chicken, cleaned and washed, to remove any traces of blood.

Cover with 4 liters of water (or enough to cover the chicken and bring to a boil without departing nothing).

Go to the pot adding the vegetables, peeled and chopped. Do not miss the green part of the leek, and celery leaves, put everything. Seasoned with pepper and parsley. If you want you can add some fresh thyme.

Let it simmer for an hour and a half at least until meaty broth.
Must go removing the foam surface is formed, so that the broth is clear. You can help in a ladle for example.

But if you're mine and you hurry, you can use a pressure cooker. Leave about 40 minutes under pressure and ready.

You can put other vegetables that you like, or to give it a more tasty, add a ham bone for example.

Strain through a fine sieve or Chinese. You can book to eat chicken with vegetables in the broth.
