Preparation

General procedure.

We need a pan or pot with lid and a frying pan. Peel the onion and cut it into small pieces, into squares.

We heat a little oil in a pan and when hot, add the onion letting it do to a simmer. Meanwhile, let the apple peeling and cutting, like onion, diced or small squares.

Add the apples to the onions and stir well leaving it to simmer about 5 minutes, until we see that the apple is like a compote.

We add after that we will have carrots, peeled and diced small cortazo previously. The stir well and leave in the pan for 5 minutes.

Now we add the coconut milk (to taste each liquid depending on how you like the sauce) and curry. Everything is cooked for a few minutes and stir occasionally to reduce a little coconut milk and mix all ingredients and flavors.

Remove from heat and pass through a sieve but Chinese or blender. So we already have the sauce for this chicken curry!.

In the pot or even in the same pan, we take a little oil over medium heat and when hot add the chicken. laps We browned, but not done at all. What we cover later to saute better.

When browned chicken, is when we add the curry sauce, stirring well to mix all ingredients and chicken smack purchase the sauce.
leave stand over low heat about 10-15 minutes, so the chicken will end cooking.

NOTE: We accompany it with some sauteed mushrooms.
In the same pan where you just make the sauce, take 2 tbsp oil and when hot add the mushrooms (previously cleaned) and saute for a couple of minutes to brown slightly. After the mushroom mixture with the curry sauce you have prepared.

Grind it all until it is finite. Add to this the ginger, turmeric and curry and back to give the grinder a couple of seconds.

Now peel the garlic, cut into 3 or 4 pieces and put it in the grinder along with other spices. Grind it until it forms a paste.

When the onion is tender (you look good transparent) just add the pasta to make and mix well. Leave it on low heat while continuing with the recipe.

Put a frying pan, without oil. When you take something warm almond flour and let it crisp up for a few seconds (but careful not to burn yourself). Take the almonds from the pan and set aside.

In the same skillet, saute the chicken over high heat. Add coconut milk and toasted almond flour. Mix well and leave on medium heat. Stir well and leave over medium-high to reduce the curry sauce. And presto!
